I have been trying to avoid pork and beef since 1993. You would think that I would cringe and smirk at the idea of eating melted pork fat inside some four wrap. But no! Pork, fish, shrimp, beef–whatever it is they decide to put inside, I am deigned to eat the thing.

I tried to get recipes for it, hoping that one day I could cook it but I realized that perhaps I should leave it to the experts. Unfortunately, there aren’t any xiaolongbaos that are as good in Manila but there are okay ones. Chinatown is a worldwide phenomenon. The Chinese are amazing. There’s a Chinatown in every city.
